1 cup pine nuts
1 garlic clove
1/2 cup grated Parmesan cheese plus more for optional topping
1 cup packed fresh basil leaves
1 bowl pasta
1 1/2 frozen peas
Juice 1/2 lemon
5 cherry tomatoes
Salt and pepper
Cook pasta according to package directions.
Meanwhile, place peas, garlic, pine nuts in a blender or food processor.
Add olive oil while blending the mixture to a medium speed for one minute
Add the rest of the ingredients until it reaches the perfect consistency.
Drain and toss the pasta into a bowl with the olive oil. Cool to room temperature.
Add the pesto mixture to the cooled pasta and then add the Parmesan Cheese, cherry tomatoes , salt and peper. Mix well, season to taste, and serve at room
