Easy Vegetable Puff Pastry Appetizer with Goat Cheese Recipe

Puff Pastry Appetizers with Goat Cheese and Jam are an easy snack made with just a few ingredients! Your college roommates and friends will love these bite-size treats.


  • ▢ 1 sheet puff pastry (thawed)
  • ▢ 1 bunch asparagus
  • ▢ 8 oz creamy goat cheese
  • ▢ 1 yellow squash
  • ▢ 16 oz. Pkg frozen puff pastry dough
  • ▢ salt and pepper to taste
  • ▢ 2 tbsp olive oil


  • Preheat oven to 350 degrees F. 
  • Dice all the vegetables and cut the asparagus into little pieces
  • In a large bowl, toss the squash, asparagus, and zucchini with the olive oil and salt and pepper. 
  • Lay the vegetable mix out on a cookie sheet and put it inside the oven for 15 minutes,
  • Meanwhile, dust some flour onto a clean work surface and, using a rolling pin, roll out the pastry into a square. Cut into equal squares.
  • Place the pastry squares on a baking tray, leaving a space between each.
  • Using a spoon, Top each square pastry with the crumbled goat cheese.
  • Add the cooked vegetables on top of the goat cheese. 
  • Bake for 15 minutes, or until puff pastry is golden brown and puffed.  Serve warm or at room temperature.  Garnish with extra chopped herbs or chives (optional).  Enjoy! 🙂
